I have a short write up for a short recipe because I don't want to delay you from making these cookies. Let me introduce you to these little mounds of goodness that bring back fond memories of my youth: the chocolate macaroon, or haystacks, depending where you're from. I remember making them with my grandmother and stirring in the oats and coconut and helping scoop them out. These cookies easily and quickly come together and the best part is that you don't even have to turn on your oven! The hardest part is waiting until they're set to eat one. Even then, you can't get away with cheating and sneaking a cookie away because they leave a mark on the paper when you pull them off. The macaroons will freeze beautifully and they taste great frozen if you dare sneak them from the freezer! (Guilty as charged!)

Grandma's Magic Breadbox: No-Bake Chocolate Macaroons (Haystacks)

Ingredients

2 cups sugar
1/2 cup butter 
1/2 cup milk 
3 cups dry oats
1 cup coconut
6 tbsp cocoa
1 tsp vanilla extract

Directions

  1. Bring the sugar, butter and milk to a boil. 
  2. Remove from heat
  3. Stir in remainder of ingredients
  4. Drop by teaspoon onto tin foil or wax paper & let cool
