Who doesn't like a warm biscuit with a nice bowl of soup, or chili or stew? I know I sure do. While many recipes boast being "easy", some have quite a few steps, especially with wanting to keep the butter cold to ensure maximum rise and layers.

I have often used the trick of freezing the butter and then grating it into the flour mixture. It's worked quite well. But hold on to your biscuits, folks!  This one's got an even easier shortcut: semi-freeze your buttermilk, and pour in melted butter.  The fats in the butter will solidify almost on contact and you'll achieve light butter flakes as shown in this side photo. 
I know your next question's gonna be who has time for making biscuits on a weekday?  Honestly, this recipe doesn't require much prep time.  While the buttermilk is in the freezer, assemble the remainder of your ingredients, your oven will be screaming hot, your pans lined will silpats or parchment paper and the rest is just a matter of mixing wet with dry.  You don't even need to knead or a rolling pin.  Just pat down the dough on a floured surface and cut out your biscuits.  
I find one of the beautiful aspects of these fluffy and tall biscuits is that they're not all going to turn out the same. It's rustic and charming and doesn't take away how tasty they are!

Easy Buttermilk Biscuits

Yields 24 biscuits
Prep Time: 15 min
Cook Time:15 min

Ingredients

2 cups buttermilk
1 cup butter
4 cups all purpose flour + 1/3 cup flour for work surface
2 Tbs sugar
1 tsp baking soda
4 tsp baking powder
1 tsp salt

Instructions

  1. Preheat oven to 475 degrees 
  2. Measure out buttermilk, and put it in the freezer while preparing the other parts of the recipe. It should be in the freezer for 10-15 minutes. 
  3. Whisk 4 cups flour, sugar, baking powder, baking soda, and salt together in a large bowl. 
  4. In a small bowl, melt butter in the microwave, cover with a paper towel to keep it from splattering. 
  5. Combine buttermilk and melted butter, and stir with a fork. The butter should clump up and harden into little bits. 
  6. Combine wet and dry ingredients, and stir until just combined.

  7. Sprinkle about 1/3 cup of flour onto a work surface and turn dough out on to it. 
  8. Knead the dough for about 30 seconds 
  9. Press it out with your hands until it is about a centimeter to a centimeter and a half thickness. 
  10. Use a biscuit cutter to cut into 12 biscuits 
  11. Roll out dough again, and cut again. You should get between 20-24 biscuits total. 
  12. Place on parchment or silpat lined baking sheet 
  13. Bake for 10-15 mins until golden brown
