With Christmas coming around way too fast this year, it's time to start working on the holiday baking and candy making.  Here's a simple recipe for fudge, practically no fail. The simple version only has the 3 base ingredients: chocolate chips, sweetened condensed milk and vanilla extract.  Following the exact same steps to make the basic fudge, you can play around with add-ins and different flavourings. It's the perfect time to clean our your pantry of those end bags of nuts, marshmallows, candies.  In this version we used up slivered almonds and toffee bits that we had just a bit of and it turned out wonderfully.  This is incredibly rich candy and so we recommend cutting it into tiny pieces.  It's so delicious that a little goes a long way!

Chocolate Maple Toffee Fudge


Prep Time: 10 min. plus chilling time
Serving: 64 1” squares (about 2 lbs)

Ingredients:

3 cups (750 mL) semi-sweet chocolate chips
1 can (300 mL) sweetened condensed milk
1 tbsp (15 mL) maple extract
½ cup (125 mL) toffee bits
½ cup (125 mL) slivered almonds (or your favorite nut)

Preparation:

1. Melt chocolate chips with Eagle Brand. Remove from heat; stir in maple extract, toffee bits, and nuts, if using.
2. Spread evenly in parchment paper-lined 8" (20 cm) square pan. Chill 4 hours or until firm.
3. Remove from pan and peel off paper. Cut into squares.
