Crockpot Turkey Chili

Working opposite shifts than Jay these last 2 weeks sort of put a kink into collaborating in the meal preparation and actually having dinner together. He was on days, I was on late afternoons.  This did give me time in the morning to prep for dinner, but I needed something that could stand up to reheating or a long and slow cook.  So, I decided to bring a slight twist to a family favorite.  It did taste great, but next time I would adjust the seasoning before serving for a bit more kick. Although, this could be looked at favorably if you have family members that don't like it as spicy as you do. Also, if you don't have a crockpot and have the luxury of a day off or weekend, this could easily be made on the stove top on a low simmer in a bog pot.

Crockpot Turkey Chili

Ingredients:
1 pound ground lean turkey meat
1 medium onion, finely diced
2 cloves of garlic, minced
2 stalks of celery, thinly sliced
1/2 large green bell pepper, finely chopped
1 big can of diced tomatoes
1 can 6 bean medley, drained (or your favorite bean can be used)
1 can corn, drained
 2 tbsp oil
salt, pepper to taste
2 tbsp chili powder

Directions:
1. Either using your crockpot insert directly on the stove (I love that mine has that feature!) or a frying pan, in 2 tbsp of oil, sweat the onions and garlic, until transluscent. Add celery and bell pepper and cook for 2 more minutes.
2.Add the ground turkey and cook through.
3. Season with salt, pepper and chili powder.
4. Transfer to the crockpot and add beans, corn and tomatoes.
5. Stir to combine. Cover and set for 8 hours on low.
