The Diabetic Gourmet: Turkey Tortellini Soup

We recently had to make some changes to our diet after finding out that the hubster is diabetic.  Don't worry, it doesn't spell the end for the treats found on Diane's Private Pantry.  In fact, it's allowed us to expand our culinary adventures.  Just like the Grandma's Magic Breadbox labels,  we'll post recipes with the label of The Diabetic Gourmet and they will contain the nutritional information and diabetic exchange information. 

The hubster loves food and one of his biggest fears with this lifestyle change is that he would no longer be able to enjoy the foods he loves.  In our research and quest to find out what foods are good for him, we've discovered that just because you're diabetic, it doesn't mean you are limited to bland and tasteless food. It's about knowing what you are eating.  So in this segment, we'll be sharing the flavourful meals we uncover on this journey.

The Diabetic Gourmet: Turkey Tortellini Soup

Servings Per Recipe: 6

Ingredients


4 cups reduced-sodium chicken broth
4 cups water
4 cups coarsely chopped roasted turkey breast (1 pound) ** I didn't have roasted turkey breast on hand, but the supermarket did have extra lean ground turkey breast infused with rosemary. So I made tiny meatballs with the pound of meat and roasted then in the oven to get that roasted extra flavour.
1 14 1/2 - ounce can no-salt-added diced tomatoes, undrained
1 tablespoon dried Italian seasoning, crushed
1 9 - ounce package refrigerated cheese tortellini
2 cups fresh baby spinach
6 tablespoons shredded Parmesan cheese (optional)

Directions


In a 5- to 6-quart slow cooker combine broth, the water, chopped turkey, tomatoes, and Italian seasoning.

Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours. If using low-heat setting, turn to high-heat setting. Stir in tortellini. Cover and cook for 30 minutes more or until tortellini is tender. Stir in spinach. If desired, sprinkle each serving with 1 tablespoon cheese.
